Tomatillo salsa have roasted garlic and chipotle pepper. This sauce is ideal for meat tacos, or even just with tortilla chips and a good beer.
For a good sauce it is always recommended to grill the ingredients such as tomatoes or tomatillos, chilies, onion and even garlic, it gives a richer flavor, than if we boiled it in water, although I must confess a salsa is a salsa, I mean that it doesn’t matter how you do it, is always a good complement to your Mexican meals.
Always remember, Mexican food without the salsa it would not be Mexican food.

- Boil the chipotle peppers in water over medium heat until hydrated, about 5 min.
- Brown the chilies on a griddle until they turn brown.
- Brown the tomatillos, garlic and onion on a griddle.
- Blend the tomatillos, garlic, onion and chilies with a little water, approx. 1/2 cup and salt to taste.
