Grind in a blender, tomato, 4 slices of bacon, thyme and marjoram, to form a paste, don't add water. Reserve.
Grind in molcajete, peppers and garlic. Reserve.
We add what we got from the molcajete (garlic and pepper) to the 500g of beef, and the rest of the ingredients along with what we got from the blender. Integrate all the ingredients well. We form small spheres and shape them by hand. We cook the hamburgers in a frying pan with little oil or on the grill, until they are well cooked.
Roast the Anaheim pepper on a comal(griddle) or grilled. Put it in a bag to sweat approx. 5 min. Remove the skin, seeds and veins from the chili. Reserve
