Mexican Meatloaf recipe

I share this Meatloaf recipe, as it is known in the United States, and one of my favorites because it makes me remember great memories of my childhood. It is prepared with ground beef in the oven. Easy to prepare, ideal to show off with those you love or for a very special occasion.

There are countless versions from country to country, for example in the United States it is usually prepared with breadcrumbs and sometimes it is decorated with a mixture of tomato sauce and brown sugar. In the UK they prepare it with vegetables and potatoes. Other regions they put the covering of puff pastry. In Mexico there is a great variety of meat pie recipes, in some regions boiled eggs are placed in the center.

It is made of beef or you can mix it with pork, fine herbs are added, they can be fresh or dry such as thyme, marjoram, garlic, salt, pepper as well as tomato and egg to give it more moisture, also for the flavor we talk about Maggi sauce, Worcestershire sauce, mustard, last but not least, carrot. They are divided into two, between these two cream cheese is added, and to decorate, slices of bacon and ketchup. It is a recipe loaded with a lot of flavor.

Meatloaf with Bacon and Baked Cream Cheese (Meatloaf)

Instructions
  1. In a molcajete grind pepper and garlic, reserve.
  2. Grind the tomato, cut into small cubes, 4 slices of bacon, thyme and marjoram. Reserve.
  3. In a container, incorporate the ground meat, cilantro, grated carrot, egg, mustard, Maggi sauce, Worcestershire sauce, salt, which we obtained from the blender and the molcajete. Mix well.
  4. Separate into two equal parts.
  5. In a baking dish we will arrange by layers: First layer: First batch of prepared meat Second layer: Cream cheese cut into thin slices Third layer: Second batch of prepared meat Fourth layer: Decorate with bacon slices. Spread a thin layer of ketchup. Cover the container with a lid or aluminum. Bake preheated oven 220-250 C for 50 min. Remove the aluminum, bake for 15 min. plus. The cake will be ready when it reaches a temperature in the center of 75 degrees C.
